Honey Walnut Shrimp



What is your go-to Panda Express entree? When we first ordered takeout from Panda Express, I remember being excited to try its orange chicken because everyone was raving about it. Yet, at the end of the meal, I pointed at the leftover glaze and walnuts stuck on my plate and said “Mom, let’s make this.”.


I never would have thought of adding walnuts into a shrimp dish because, in my head, they only belong in cookies and salads. But after trying this dish, they now belong in cookies, salads, and honey-glazed shrimp. Their earthy taste and crisp texture pair amazingly with the freshly fried shrimp coated in a sweet glaze.


Recipe

Yields 4-5 servings

Ingredients

Candied Walnuts

½ cup sugar

1 cup water

½ cup walnuts, chopped


Honey Glaze

¼ cup mayonnaise

2 tablespoons honey

1 tablespoon condensed milk

½ teaspoon salt


Fried Shrimp

400 grams shrimp, peeled

½ teaspoon salt

½ teaspoon white pepper

4 egg whites

⅔ cup cornstarch

Oil for frying


Procedure

Candied Walnuts

  • In a pan, heat the water and sugar together until the sugar is melted and has turned a golden color. This took around 15 minutes.

  • Toss the walnuts into the pan and coat it with the syrup.

  • Transfer the candied walnuts on a lined baking tray.

  • Let these cool and set aside.


Honey Glaze

  • In a bowl, mix together mayonnaise, honey, condensed milk, and salt.


Fried Shrimp

  • Season the shrimp with salt and pepper.

  • In a frying pan, heat some oil.

  • Beat egg whites until soft peaks form.

  • Fold in the cornstarch.

  • Dip the shrimp in the egg white and cornstarch mixture.

  • Fry them for 4 minutes or until golden.

  • Once done, transfer them into a cooling rack or extra plate.

  • Coat these and the candied walnuts with the honey glaze.

  • Serve and enjoy!
