Imagine this: You are in a cozy cabin in the middle of nowhere enjoying the peaceful solitude that it provides. Snuggled under a heavy blanket wearing comfy socks, you are reading a novel while the fireplace crackles in the background producing a woody scent that wafts through the entire house.
That was the tantalizing image my brain formed when I was eating the freshly fried apple fritters. I am not sure why this scenario came to me, but I reckon it is because of the amount of cinnamon I added into the batter and the warmth that the fritter radiates. Still, I am grateful that I was able to leave my room for a bit, albeit not literally.
These taste as if a classic glazed doughnut and a slice of apple pie united. The crisp apples, crunchy exterior and fluffy interior make every bite of these fritters a pure delight. Apart from their scrumptiousness and lovely mouthfeel, apple fritters are very much straightforward to make. All the mixing and frying can be done in around thirty minutes! You do not even have to use any yeast nor wait for such a lengthy period for the dough to rise. They are so addicting that you cannot be satisfied with just one, but I will not stop you from indulging yourself with all 10 because as they say “An apple a day keeps the doctors away.”.
Recipe
Yields 10 fritters
~ Ingredients ~
Fritters
Oil for deep frying (around 2”-3” from the bottom of the pan)
1 large egg
1 tablespoon sugar
118 ml or ½ cup milk
1 tablespoon oil
1 medium apple, peeled and diced
130 grams or 1 cup flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
⅛ teaspoon nutmeg
¼ teaspoon salt
Glaze
½ cup powdered sugar
1 tablespoon water
~ Procedure ~
In a pan, heat the oil until it reaches 365°F.
Lightly beat eggs and sugar together.
Add the milk, apples and oil into the eggs and sugar.
Combine flour, baking powder, ground cinnamon and nutmeg into the mixture.
Scoop the ¼ cup of batter onto parchment papers cut into 5”x4” rectangles.
Carefully drop a few into the hot oil and remove the parchment paper from the oil. Fry for 1 minute then flip and fry for another minute or until golden brown.
Afterward, place them on a cooling rack or dry with paper towels.
Mix together the powdered sugar and water to form a glaze.
Glaze each fritter, serve warm and enjoy!
