To stay more alert during online classes, I have turned to drinking tea in the morning. But my daily oatmeal does not pair well with my drink, so I decided to finally make scones. These have always been on the forefront of my “things to bake” list, yet I tend to always knock it down a place when I feel lazy. Overestimating the treat’s level of difficulty to produce, I have procrastinated making them ever since I added them on the list. Now that I have made them, I have a more veracious account of how simple they are to make.
I was extremely proud of the way my scones puffed into perfect shape on my first attempt to make them. When we pulled them out of the oven, the blended aromas of the spices used flowed through the air leaving an inviting scent that drew all the members of our household into the kitchen. Everyone huddled around me when I was taking pictures of the final product because they could not wait any longer to get their hands on some freshly baked scones. It shocked me that it only took around an hour and 30 minutes to complete the entire recipe. Because of this, I am certain that you will see more recipes for scones in the near future.
This particular variation of the beloved English delight brings forth so much comfort when enjoyed at any time of the day. Scones may have a reputation of being a little too crumbly when lacking in fat content, but when added, the carrots promise a moist interior and a crisp exterior. The walnuts and raisins provide an extra crunch and sweetness to the already delectable pastry. As a finishing touch, a smooth and luscious cream cheese glaze is generously drizzled atop each scone.

Yields 12 servings
~ Ingredients ~
Carrot Cake Scones
3 ¼ cup or 390 grams all-purpose flour
¾ cup or 150 grams sugar
1 tablespoon baking powder
1 teaspoon salt
2 teaspoons ground cinnamon
¼ teaspoon ginger powder
½ teaspoon nutmeg
⅛ teaspoon cloves
1 teaspoon vanilla extract
1 ⅓ cup or 330 mL all-purpose cream
¾ cup carrots, peeled and grated
½ cup raisins
½ cup walnuts, chopped
Cream Cheese Glaze
½ cup or 120 grams cream cheese
1 ⅓ cup or 150 grams powdered sugar
4 tablespoons or 60 grams butter
1 teaspoon vanilla extract
~ Procedure ~
Preheat the oven to 425°F.
Mix all-purpose flour, sugar, baking powder, salt, cinnamon, ginger powder, nutmeg, and cloves in a bowl.
Slowly pour the cream and vanilla extract into the dry ingredients. Mix until fully combined and a dough begins to form.
Mix in the carrots, raisins and walnuts.
Divide the dough into 2 portions.
On a lined baking tray, shape each portion into a 6” circle then cut them into 6 pieces each.
Bake for 20 minutes, flipping the tray halfway.
Serve with tea and enjoy!
