Chocolate cakes are already very indulgent, but why stop there if you can have the spectacular kind with warm and silky chocolate centers? One simply cannot resist the lure of chocolate lava cakes. Pair them with your favorite vanilla ice cream for a satisfying a la mode experience.

Yields 5 servings
Ingredients
½ cup or 100 grams butter
115 grams semi-sweet chocolate
2 eggs
2 egg yolks
⅓ cup or 70 grams sugar
½ teaspoon vanilla extract
1 tablespoon cake flour
Pinch of salt
Powdered sugar for dusting
Extra butter and sugar for the ramekins
Procedure
Preheat the oven to 400℉.
Butter the ramekins and coat with sugar.
Put the butter and chocolate in a heat-safe bowl, and place this on top of a saucepan with boiling water to create a makeshift Bain-marie or double boiler. Use a spatula to mix them together until they have completely melted.
In another bowl, whip the eggs, yolks, and sugar together until light.
Slowly fold the melted chocolate into the whipped eggs.
Fold in the vanilla, a pinch of salt, and cake flour.
Divide the batter into 5 ramekins.
Bake these for 9-10 minutes or until the top and sides are set.
Let the cakes rest for 10 minutes.
Use an offset spatula to scrape the edge away from the ramekin. Place the serving plate on top of the ramekin and turn it upside down. Gently lift the ramekin up.
Dust with powdered sugar and serve immediately. Enjoy!
