I have always enjoyed eating oats for breakfast, but I have never made baked oats because I did not have the time and patience to wait 20 minutes before devouring the breakfast I have been dreaming about since the night before. Now that it is summer, I can allot more time to prepare and enjoy a hearty meal early in the morning.
Since this is my first attempt at what some may consider art, I went with a very simple recipe with ingredients I already had at home. And since this kitchen adventure was so successful that I was able to do it only half awake, I look forward to experimenting with so many more baked oatmeal flavors throughout this summer.
Recipe
Yields 1 serving
Ingredients
⅓ cup rolled oats
½ banana
½ tsp cinnamon
½ tsp vanilla
2 teaspoons sweetener (sugar, honey, or maypole syrup)
¼ cup milk
1 egg
½ tsp baking powder
Sprinkle of brown sugar.
1 tablespoon powdered sugar
½ teaspoon water
Procedure
Preheat the oven to 350℉.
Blend together oats, banana, cinnamon, vanilla, sweetener, egg, and milk.
Mix the baking powder into the batter.
Pour the batter into an oven-safe bowl.
Sprinkle the top with brown sugar and a little more cinnamon.
Bake for 20-25 minutes.
Mix the powdered sugar and water together.
Drizzle the glaze on top of the oats.
Serve immediately and enjoy!
