Cookies and Cream Waffles with Sweet Creme Sauce



Which part of the classic sandwich cookies do you like more? Are you a filling fanatic, or do you enjoy the crisp chocolate cookie more? As a little kid, I never preferred the cream, so I often gave the center to my yaya. Now, I have come to realize that both taste the best when eaten together which is the whole point, but can I blame my seven-year-old self?


These were a delight to prepare! My brother even “helped” by crushing the cookies which yaya ended up taking over; nonetheless, it gave him a sense of accomplishment. Overall, the sweet creme sauce drizzled atop the freshly made stack of fluffy waffles made a scrumptious Monday afternoon snack! I would suggest pairing them with a mug of hot milk or chocolat chaud. Enjoy your plate of warm waffles inspired by the timeless American sandwich cookies!


Recipe

Yields 10 servings

~ Ingredients~

Chocolate Waffles

12 chocolate sandwich cookies (filling will be used for the white chocolate sauce)

¾ cup or 100 grams all-purpose flour

¾ cup or 100 grams cake flour

¾ cups or 75 grams cocoa powder

¾ cup or 150 grams white sugar

1 ½ teaspoons baking powder

½ teaspoon baking soda

1 ¼ cups or 300 grams sour cream (300 grams all-purpose cream and 1 teaspoon red cane vinegar)

3 large eggs

70 grams dark chocolate, melted

¼ cup or 60 mL milk

5 tablespoons or 75 grams butter, melted

1 teaspoon vanilla extract

Extra butter for the waffle maker


Sweet Creme Sauce

Filling from 12 chocolate sandwich cookies

¼ cup or 60 mL milk

¼ cup or 60 mL cream

170 grams white chocolate

2 teaspoons butter


~ Procedure ~

Chocolate Waffles

  • Crush the cookies and set aside.

  • In a bowl, sift together the all-purpose flour, cake flour, cocoa powder, sugar, baking soda and baking powder.

  • In another bowl, whisk together the eggs and sour cream then add in the chocolate, milk, butter and vanilla extract.

  • Add the crushed cookies to the batter.

  • Use an electric hand mixer to combine the wet and dry ingredients together in a bowl.

  • Lightly butter the grids of the waffle iron and follow the instructions of its specific brand to make the waffles. Repeat until there is no batter left.

  • Serve warm with the sweet creme filling sauce and enjoy!


Sweet Creme Filling Sauce

  • In a medium saucepan on medium heat, slowly whisk all the ingredients together until the white chocolate and sandwich cookie filling melt and are fully incorporated. This took around 3-4 minutes.

  • Transfer into another container and let it cool down.

  • Serve with the waffles and enjoy!
