It is crisp, simple, and soothing. A homemade Hainanese chicken meal will indeed bring warm joy to someone, especially when served with all its sauces.

Yields 6-8 servings
Ingredients
Hainanese chicken
1 whole chicken
6 cups water
2 chicken broth cubes
1 teaspoon whole pepper
1 tablespoon salt
5 cloves garlic, minced
1 thumb ginger, minced
1 stalk leeks
1 tablespoon sesame oil
Hainanese rice
4 cloves garlic, minced
½ cup onions, diced
3 tablespoons oil
3 cups rice, uncooked
5 cups of stock from Hainanese chicken
Soy sauce
¼ cup soy sauce
1 ¼ tablespoon sugar
Garlic ginger sauce
6 cloves garlic, minced
3 thumbs ginger, pounded
½ tablespoon sesame oil
½ teaspoon salt
Procedure
Hainanese chicken
In a large pot, boil the water.
Add in the broth cubes, whole pepper, salt, garlic, ginger, leeks, and sesame oil.
Slowly place the chicken on its side in the broth. Let it cook for 40-60 minutes, flipping the chicken halfway through.
Fill another large bowl with cold water and ice.
Once the chicken is done cooking, transfer the chicken into the ice bath.
Transfer the chicken into a container and set it aside.
To reheat the chicken, let it simmer again
Hainanese rice
In a pan, heat the oil.
Sauté the garlic and onions together.
Add in the rice.
Pour the broth from the Hainanese chicken over the rice and let it cook in the rice cooker for 20-30 minutes.
Serve alongside Hainanese chicken and enjoy!
Soy sauce
In a pan let the soy sauce and sugar simmer together until thick.
Garlic ginger sauce
In a pan, Sauté the ginger and garlic in oil.
Add in the sesame oil.
Season with salt.
Let it cook for 2-4 minutes.
