Yields 5-7 servings
Ingredients
500 grams scallops
300 grams pasta, raw weight
½ cup butter
1 bulb garlic, minced
1 lemon, juiced and zested
½ cup shrimp stock (½ cup water with 1 shrimp stock cube)
½ teaspoon salt
½ teaspoon pepper
¼ cup parmesan, grated
Optional: Chili flakes and fresh basil.
Procedure
Cook the pasta according to the instructions on the packaging.
In a pan, melt half of the butter.
Sauté the garlic until golden. Once done, transfer them to another dish.
Add more butter into the pan and sear the scallops for a minute. Remove the scallops from the pan.
Throw the garlic and cooked pasta back into the pan.
Add the lemon juice and zest to the pasta.
Pour the shrimp stock into the pan and let it simmer for a few minutes.
Season with salt and pepper.
Sprinkle some parmesan cheese and chili flakes on top.
Garnish with fresh basil and enjoy!
