It is 7 am, and I am barely awake, but I trudge out of my cold bedroom following the warmth of my kitchen to grab something to eat. During these occasions, I find myself thanking past Kylie for thinking ahead and baking goods that need no additional preparation and reheating required. It began with the brioche loaf, then the scones, and now muffins. So, if the next sweet recipe still concerns my breakfast, I am sorry. I just cannot help loving this meal first of all because I immediately look forward to it the minute my wake-up alarm vibrates. Second, it is the only meal I can eat something sweet at and not feel like breaking any unspoken etiquette about the appropriateness of my choice of food for the time of day.
I am nearly 99% certain that anyone would love it if you made these for them. The classic flavor combination performs a beautiful duet on your tongue with every single bite. Even the pickiest of picky eaters will appreciate moist and fluffy muffins to start their day off with. Trust me because my brother is the perfect case in point. Sometimes, I even dream of these muffins at night knowing that when I awake, they will be patiently sitting in my pantry waiting for me. Recipe
Yields 12 muffins
~ Ingredients ~
1 ¾ cup or 210 grams all-purpose flour
⅓ cup or 75 grams sugar
3 teaspoons baking powder
¼ teaspoon salt
1 large egg
½ cup or 120 mL milk
¼ cup or 60 mL oil
¾ cup or 180 grams ripe bananas, mashed
¼ cup or 75 grams Nutella
~ Procedure ~
Preheat the oven to 375℉.
In a bowl, combine the flour, sugar, baking powder, and salt together.
Mix the egg, milk, oil, and mashed bananas in a separate bowl.
Use a whisk to slowly combine the wet ingredients with the dry ingredients.
Once fully incorporated, scoop the batter into a lined muffin tray.
Spoon in around 1 or more teaspoons of Nutella in each muffin and use a spatula or chopstick to swirl it around.
Bake them for 15-20 minutes.
