To me, cobblers are basically the lazy version of pies. They both emit a cozy feeling and have comforting fillings. The only difference is one of them makes use of a crust that takes hours to make while the other uses a crumble that takes minutes to make. Today I was feeling more on the lazier side, so I made peach cobbler. This taste so much like Jollibee‘s peach mango pie, minus the mango. Furthermore, it is so easy to make. All you need to do is throw everything in a saucepan, bake, top it off with a scoop of your favorite ice cream flavor, and tada! A simple snack or dessert or enjoy all year round!

Yields 4-5 servings
Ingredients
Filling
1 can peaches, strained and sliced
1 ½ teaspoon cornstarch
4 tablespoons or 50 grams brown sugar
¼ teaspoon cinnamon powder
½ teaspoon lemon juice
½ teaspoon vanilla extract
Topping
¼ cup or 50 grams sugar
½ cup or 60 grams all-purpose flour
½ teaspoon baking powder
¼ teaspoon salt
3 tablespoons or 45 grams butter, cold and diced
1 egg
2 tablespoons or 30 mL milk
Optional: Ice cream
Procedure
Filling
In a saucepan, mix peaches, cornstarch, sugar, cinnamon powder, lemon juice, and vanilla together.
Let it simmer down for minutes.
Place this in an 8”x8” dish.
Topping
Preheat your oven to 375℉.
Combine sugar, all-purpose flour, baking powder, and salt.
Make a crumble by mixing the cold butter with the dry ingredients using your hands.
In another bowl, whisk together egg and milk.
Slowly combine the egg and milk with the crumble using a fork.
Sprinkle this on top of the cooked peaches.
Bake it for 20 minutes.
Once done, let it cool for a while.
Serve with a scoop of ice cream and enjoy!
