I ordered too many packs of peanut butter chips and had to make something before they went bad. For that reason and because I was simply craving cookies but did not have time to scoop them and bake them in batches, I came up with this recipe. It took ten minutes to mix everything together and another twenty to bake, so it is perfect to make when you are in a time crunch. You can also change the toppings and create different variations with the same recipe.

Yields 16 servings

½ cup or 100 grams butter, melted
1 cup or 200 grams brown sugar
1 egg
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
½ teaspoon baking soda
¼ teaspoon baking powder
½ teaspoon salt
1 cup peanut butter chips
Sea salt on top
Procedure
Preheat the oven to 375℉.
In a bowl, mix the butter and brown sugar together.
Whisk in the egg.
Slowly fold in the rest of the dry ingredients until a cookie dough is formed.
Spread the cookie dough into a lined 8”x8” square baking pan.
Bake this for 20 minutes.
Once done, let it cool for a while.
Cut it into 16 squares, and enjoy!
