The Better Bacsilog


I have seen so many people crave Ate Rica’s Bacsilog during quarantine, and I needed to know what the craze was about. Thus, I had their classic bacsilog delivered to my house the other day. I even ordered an extra side of cheese sauce so we could examine and dissect its components. I have never tried it before then and only saw it once when my friend brought it to training for lunch. It did not seem so special, but apparently, there is a magical cheese sauce that lures customers to go back daily for the rest of the month.


After passing around the measly half-ounce container of extra cheese sauce they gave us and making mom and yaya determine what ingredients they think went into making such a simple sauce, we finally had a vague idea of how to make it. The next day when the taste of the sauce is still fresh on our tongues, we did a little bit of experimenting and arrived at a near-identical concoction. But of course, we added our own extra touches to give the basic bacsilog dish an upgrade. One of those is by using double-smoked thick-cut bacon from Smoking J’s Premium Smoked Meats. The combination of smooth sweet cheese sauce, perfectly fried sunny-side-up eggs with a runny yolk and juicy and deliciously greasy bacon slices make for an indulgent breakfast, brunch or even dinner!


Recipe

Yields 4 servings

~ Ingredients ~

Cheese Sauce

2 teaspoons butter

1 ½ cups evaporated milk

100 grams cheddar cheese, grated

2 tablespoons sweet mayonnaise

1 teaspoon liquid seasoning

1 teaspoon sugar

⅛ teaspoon nutmeg


4 cups of rice

500 grams smoked bacon

4 Eggs

2 tablespoons olive oil

Salt and pepper


~ Procedure ~

Cheese Sauce

  • In a small saucepan, melt the butter and add in the evaporated milk.

  • Add in the grated cheddar cheese and mix until fully melted.

  • Use a whisk to mix in the mayonnaise, liquid seasoning, sugar and nutmeg until fully incorporated.

  • Transfer into another container and let it cool.

Better Bacsilog

  • In a grill pan on high heat, cook your bacon to your desired crisp. For thick-cut bacon, cook it for 3-4 minutes on each side.

  • In another pan, cook your sunny-side-up egg in oil and season with salt and pepper.

  • Assemble rice, egg, bacon and cheese sauce on a plate, serve and enjoy!
