Muffins are an easy on-the-go breakfast or snack to make, but occasionally, your typical chocolate, blueberry, and banana muffins just do not cut it anymore. Aside from providing the enticingly vibrant purple color, ube also gives the muffins a sweet and slightly earthy flavor while the buttery cheese crumble balances these with a little salty kick. All these textures and signature Filipino flavors mend seamlessly in this one simple muffin that tastes just like the beloved ube cake.

Ingredients
Ube Muffins
½ cup or 100 grams butter
½ cup or 100 grams sugar
2 large eggs
¾ cup or 180 mL milk
1 tablespoon ube flavoring
2 cups or 240 grams all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
⅓ cup ube halaya
Cheese Crumble
½ cup or 60 grams all-purpose flour
¼ cup or 50 grams butter, cold
¼ cup or 50 grams sugar
⅓ cup grated Cheddar or Edam cheese
Procedure
Preheat the oven to 350℉.
In a bowl, cream the butter and sugar until light.
Add the eggs one at a time.
Pour in the milk and ube flavoring.
Slowly Fold in the all-purpose flour, baking powder, and salt.
Pour the batter into muffin liners until they are halfway full.
Add a teaspoon of ube halaya and use a knife or chopstick to swirl it in the batter.
Make the cheese crumble by mixing all the ingredients using your hands. Make sure not to over mix and work fast so the butter will not melt. It should look like crumbs at the end.
Sprinkle the crumble on top of the muffins.
Bake them for 20 minutes.
Once done, let them cool for a while, and enjoy!
